The Bay of Biscay’s anchovy (engraulis encrasicholus) is greatly appreciated fresh, salted or preserved in oil because of its strong aroma, texture and pink flesh.
It is marketed as semi-preserved in two formats: cans and bottles.
The anchovy plays a role in preventing cardiovascular problems. Also, its contribution of fat-soluble vitamins contributes to the maintenance and reparation of the mucous membranes, skin and other tissues, and promoting a resistance to infections.
