Crispy Cabrales and Phyllo Sandwiches
Metric version of recipe
Yields 8 portions
|Cured Manchego or Manchego-style Goat cheese
|Heavy cream, divided use
||½ cup plus 1-1/2 Tbsp.
Bring the cheeses to room temperature.
Combine ½ cup of the heavy cream with the sugar and stir gently with a whisk until the sugar has dissolved. Set aside.
Mash the grated Manchego, the Cabrales, and the cream cheese together in a mixing bowl with the remaining heavy cream and the soy sauce.
Preheat the oven to 375°F. Line a baking sheet with parchment. Transfer a sheet of phyllo carefully to the parchment-lined baking sheet. Brush lightly but thoroughly with the cream mixture and place another sheet on top. Brush the top phyllo sheet with the cream mixture. Cut the phyllo into 3-inch triangles, using a pizza cutter. Separate the triangles slightly. Place the sheet pan in the oven and bake for 6 to 7 minutes, until light to medium brown and crisp. Remove from the oven. Repeat with the remaining phyllo.
Top 16 of the triangles with 1 to 2 tablespoons of the mashed cheeses. Then place another phyllo triangle on top of each one to form sandwiches.
