Crispy Cabrales and Phyllo Sandwiches

Metric version of recipe

Yields 8 portions

Ingredient Amount
Cured Manchego or Manchego-style Goat cheese ¼ cup
Cabrales, crumbled ¼ cup
Cream cheese 1/3 cup
Heavy cream, divided use ½ cup plus 1-1/2 Tbsp.
Sugar ¼ cup
Soy sauce 1 tsp.
Phyllo dough 4 sheets


  1. Bring the cheeses to room temperature.
  2. Combine ½ cup of the heavy cream with the sugar and stir gently with a whisk until the sugar has dissolved. Set aside.
  3. Mash the grated Manchego, the Cabrales, and the cream cheese together in a mixing bowl with the remaining heavy cream and the soy sauce.
  4. Preheat the oven to 375°F. Line a baking sheet with parchment. Transfer a sheet of phyllo carefully to the parchment-lined baking sheet. Brush lightly but thoroughly with the cream mixture and place another sheet on top. Brush the top phyllo sheet with the cream mixture. Cut the phyllo into 3-inch triangles, using a pizza cutter. Separate the triangles slightly. Place the sheet pan in the oven and bake for 6 to 7 minutes, until light to medium brown and crisp. Remove from the oven. Repeat with the remaining phyllo.
  5. Top 16 of the triangles with 1 to 2 tablespoons of the mashed cheeses. Then place another phyllo triangle on top of each one to form sandwiches.
