Crispy Cabrales and Phyllo Sandwiches (Metric)

Customary version of recipe

Yields 8 portions

Ingredient Amount
Cured Manchego or Manchego-style Goat cheese 60 ml.
Cabrales, crumbled 60 ml.
Cream cheese 75 ml.
Heavy cream, divided use 125 ml. plus 22 ml.
Sugar 60 ml.
Soy sauce 5 ml.
Phyllo dough 4 sheets


  1. Bring the cheeses to room temperature.
  2. Combine 125 ml. of the heavy cream with the sugar and stir gently with a whisk until the sugar has dissolved. Set aside.
  3. Mash the grated Manchego, the Cabrales, and the cream cheese together in a mixing bowl with the remaining heavy cream and the soy sauce.
  4. Preheat the oven to 190°C. Line a baking sheet with parchment. Transfer a sheet of phyllo carefully to the parchment-lined baking sheet. Brush lightly but thoroughly with the cream mixture and place another sheet on top. Brush the top phyllo sheet with the cream mixture. Cut the phyllo into 8 cm. triangles, using a pizza cutter. Separate the triangles slightly. Place the sheet pan in the oven and bake for 6 to 7 minutes, until light to medium brown and crisp. Remove from the oven. Repeat with the remaining phyllo.
  5. Top 16 of the triangles with 15 to 30 ml. of the mashed cheeses. Then place another phyllo triangle on top of each one to form sandwiches.
